
Food Development Expo 2026, a specialist exhibition covering health, taste, food safety and quality, and shelf-life technology, will be held at Tokyo Big Sight from October 14 to 16, 2026.
First held in 1990, the exhibition reaches its 37th edition in 2026. It comprises four shows: Hi Japan for health ingredients; FiT Japan for taste, flavor, and related technologies; S-tec Japan for analysis, measurement, hygiene, and manufacturing technology; and LL Japan for longer-lasting foods. Approximately 1,100 booths and 40,000 visitors are expected.
For health food and supplement developers, the exhibition offers an opportunity to consider ingredients together with manufacturing, analysis, quality, flavor, and shelf life.
An ingredient alone does not complete product development
Product planning often begins with the question of which ingredient to include. In practice, many decisions remain after the ingredient is chosen. A powder with poor flow properties may be difficult to fill into capsules or compress into tablets. Strong taste or odor can make a material unsuitable for an unmodified drink or granule. A moisture-sensitive material may require changes to production, packaging, and storage.
Ingredients, formulation, manufacturing technology, quality control, packaging, and shelf life therefore need to form one product design. The exhibition's combination of health ingredients, taste, analysis, manufacturing, and shelf-life technologies reflects this cross-disciplinary work.
Hi Japan: Turning a health ingredient into a product
Hi Japan presents ingredients relevant to health and functional food development. Evaluating a material requires more than its name and content level. Origin, specifications, analytical methods, safety documentation, track record, and supply capacity all matter.
For an OEM product, developers must also establish whether a factory can use the ingredient, whether the intended amount can be manufactured, and whether the cost remains viable after production losses. A material's popularity is not enough; the conditions for a viable finished product must be confirmed.
FiT Japan: Taste shapes product value
Taste and ease of consumption matter in health foods, especially jellies, gummies, drinks, powdered beverages, and granules. The product must be pleasant enough for people to continue using it.
Bitterness, astringency, acidity, and odor can change how the same ingredient is formulated. Flavorings, sweeteners, and acidulants may help, but the ingredient dose may also need adjustment. Products intended for export must account for regional preferences: a flavor accepted in Japan may be judged differently elsewhere, while intense sweetness or aroma common overseas may seem excessive in Japan.
Taste is not merely an extra feature. It is part of the design that affects continued use and repeat purchases.
S-tec Japan: Consider quality from the development stage
Quality cannot be left until manufacturing is complete. Ingredient specifications, production processes, analytical methods, microbiological controls, foreign-material prevention, and storage conditions should be defined during development.
S-tec Japan covers analysis and measurement, hygiene materials, and manufacturing technology related to food safety and quality. Documentation becomes even more important for export products. Customers or destination markets may request ingredient specifications, material information, allergen information, and process documents in addition to the finished-product test report.
An OEM partner should therefore be assessed both on its ability to make the product and its ability to manage and provide the required quality information.
LL Japan: Shelf life affects logistics and sales
Technology that extends a food's usable life affects inventory, logistics, waste, and exports, not just the printed best-before date. An export product may spend time in a Japanese warehouse, export procedures, international transport, and destination-country customs before sales begin.
Shelf life should therefore be considered alongside the planned distribution route from the development stage. The aim is a realistic selling period while maintaining quality, rather than simply the longest possible date.
Define the product before searching for an OEM factory
An OEM enquiry may start with “find a factory that can make this product.” First, it helps to define the product conditions: Japan or overseas as the target market; intended consumers; capsules, tablets, granules, jellies, gummies, or drinks as the desired form; whether ingredients are specified or proposed by the OEM partner; initial quantity; target price; and required quality documents.
These conditions determine suitable materials, methods, and factories. Without them, exhibitors are hard to compare. With a clear concept and requirements, exhibition contacts can become concrete development candidates.
Plan development in Japan and overseas expansion together
Japanese health food development increasingly considers Taiwan, China, and Southeast Asia as well as domestic sales. Exporting a product manufactured in Japan may require checks on ingredients, manufacturing details, labeling, and export documents. Overseas companies developing in Japan must also check Japanese ingredient rules, labeling systems, and manufacturing conditions.
The intended sales market should therefore guide ingredient selection, manufacturing, sales, and export planning from the outset.
